This is a sweet pasta dish and it is absolutely delicious. It is super easy to make and has a ton of flavor. This is a dish that I make on occasion as a treat. I would label this dish as a dessert.
2 c water
1/3 cup canned coconut milk
1/2 c coconut sugar
1/3 c dried cranberries, chopped
1/3 c dried apricots, chopped
2 1/2 c couscous
1/2 c slivered almonds, toasted and chopped
1/2 c walnuts, toasted and chopped
1/4 c coconut flakes
- In a medium saucepan combine the water, coconut milk, sugar, apricots, cherries and coconut flakes. Bring the mixture to a boil and stir constantly until the sugar is dissolved. About 2 minutes.
- Stir in the couscous and remove from the heat. Cover with a lid and allow the mixture to sit for about 10 -12 minutes.
- Remove the lid and fluff the mixture with a fork and add in the nuts. Pour the mixture onto a cookie sheet to cool completely. This allows the mixture to keep from clumping together.
- When cool, spoon the mixture into a serving bowl and serve.
