Rosemary Couscous With Bell pepper And Garlic

Sometimes we don’t have time to throw together a big lunch or dinner. This recipe is easy and clean and it tastes great.

INGREDIENTS:

2 cups vegetable broth

2 tsp rosemary, minced

2 clove garlic, minced

1/4 c bell pepper, chopped very fine

salt and pepper

2 c couscous

DIRECTIONS:

  1.  In a medium saucepan combine the broth, rosemary, bell pepper, garlic, salt, and pepper. Bring to a boil. Turn the heat to low and cover with a lid. Cook for 5 minutes.
  2. Add the couscous and stir to combine. Turn the heat off and cover with a lid and allow the couscous to sit for 15 to 20 minutes.
  3. Remove the lid and fluff with a fork. Pour into a serving dish and serve.
