Wacky Mac Pasta Salad

This is a fun spin on the pasta salad. I adore this salad and I make it a lot. It is not oil free but you can omit the oil if you want. It is still very delicious. It travels well and I take this with me a lot for my lunch.

INGREDIENTS:

1 lb small pasta of choice

1 tomato, diced small

2 green onions, diced

1 cucumber, diced small

1 cup black olives

zest of 1 lemon

juice of 1 lemon

1/4 c white wine vinegar

1/3 c olive oil ( or water)

salt and pepper ( to taste)

1 tbsp herb de Provence

1 tsp basil

1 tsp parsley

1/4 c vegan parmesan cheese

1/2 red bell pepper, seeded and diced small

DIRECTIONS:

  1. Bring a large pot of water to a boil and add the pasta. Cook for 10 -12 minutes or until the pasta is tender. Drain and rinse under cold water. Add to a large bowl.
  2. Add the remaining ingredients and toss to coat well.
  3. Cover and chill in the fridge for 1 hour.
  4. Toss before serving and adjust seasonings.
