Avocado And Arugula Pesto Pasta

INGREDIENTS:

2 cups arugula

2 avocados

2 cloves garlic, minced

juice of 2 limes

1 cup fresh basil, torn

salt and pepper to taste

1 box small pasta of choice

DIRECTIONS:

  1. In a food processor combine all of the ingredients except the pasta and blend until smooth. set aside.
  2. Bring a large pot of water to a boil and add the pasta and cook until tender. About 10-12 minutes. Drain and pour the pasta into a large bowl.
  3. Top with the pesto and toss to coat evenly.
  4. Scoop into a serving plater and serve.
