Open-Faced Hot Turkey And Cheese Sandwiches

I enjoy a good open-faced sandwich with a side of fries. Back when I worked at a small local restaurant in my younger years, I would always order one. There’s something so simple but so good about them. They just never failed me. lol. I remember my then-boyfriend would always put them together as an actual sandwich and eat them like that, and I would always give him the “what are you doing, my guy” look. To each their own, I reckon, but in my book, you eat them with a fork. lol.

This recipe serves two people, but you can easily double or triple it to feed your whole family. It’s a perfect, easy-to-assemble meal for an after-school lunch or a relaxing weekend bite. No matter how you make this, it’s going to be delicious, so let’s get started.

INGREDIENTS:

4 Slices of thick-cut bread – I use Texas toast
8 to 10 Slices of thin-cut or sandwich-cut deli turkey slices – about 2 to 3 pieces per 1 slice of bread
4 Slices of Swiss or Provolone Cheese
2 Tbsp. Butter – or more if needed
Mayo – optional
Mustard – optional

TURKEY GRAVY:

2 Tbsp. Butter
2 Tbsp. Flour
1 1/4 C. Chicken broth
1/4 C. Milk
1/2 Tsp. Worcestershire sauce
1/4 Tsp. Onion powder
1/4 Tsp. Garlic powder
Salt and pepper – to taste

DIRECTIONS:

1. Melt butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute.
2. Slowly whisk in the broth until smooth.
3. Add in the milk, Worcestershire sauce, onion powder, garlic powder, a bit of salt, and pepper to taste. Whisk together and cook for 2 to 3 minutes, or until slightly thickened. Remove from the heat and set aside.
4. Butter both sides of the bread and either toast in a skillet over medium heat or place under the broiler for 1 to 2 minutes per side. Keep an eye on them so they do not burn under the broiler. If you toasted the bread in a skillet, place it on a sheet tray.
5. If you prefer, you can spread some mayo or mustard onto the bread. This is optional.
6. Place the turkey onto the bread, dividing it between all four pieces of bread.
7. Spoon some of the gravy over the turkey. Top each with a slice of cheese.
8. Place the sandwiches under the broiler for 2 to 3 minutes, or until melted, or you can put them in the oven at 350* for 5 to 10 minutes to melt the cheese. Remove from the oven and spoon more gravy on top of the melted cheese.
9. Place the sandwiches on a plate and serve with a side of fries.
