Fruit Salad With Honey Cinnamon Dressing

This is a super simple recipe made especially for those hot summer months. It is refreshing with the cold fruit, warming with the cinnamon dressing, and hearty with the pecans for that crunch. It is perfect for picnics, BBQs, family get-togethers, and everything in between. I especially love this recipe because you can add whatever fruit you have on hand or fruit that you like.

Let’s get started.

INGREDIENTS:

3 Red/Green Apples – cored and chopped
2 Pears – cored and chopped (optional)
2 C. Strawberries – hulled and sliced
1 C. Purple/Green Grapes – Halved
2 Oranges – peeled, separated, and halved
1/2 C. Pomegranate seeds (optional)
2 Bananas – sliced (optional)
1/2 C. Pecans – chopped ( or nuts/ (1/4c)seeds of choice)

DRESSING:

1/2 C. Orange juice ( optionally fresh-squeezed; bottled will work)
1 Tbsp. Honey (optionally maple syrup if you can not have honey)
1/2 Tsp. Vanilla Extract
1/2 Tsp. Cinnamon
1/2 tsp. Flaky salt or 1/4 tsp fine salt
4 Tbsp. Olive oil

DIRECTIONS:

  1. Prepare your fruit. Chop any fruit that needs chopping and add it to a large bowl.
  2. Add the pomegranate seeds and pecans.
  3. In a small bowl, whisk together the olive oil, orange juice, honey, vanilla, cinnamon, and salt. Mix until well combined. Pour over the fruit and toss well. Taste and adjust the sweetness or salt if needed. Toss again. Cover with plastic wrap or a lid and chill for 30 minutes or until ready to serve. Toss again before serving.

NOTES:

  • You can make this any time of year. I also love making this for a Thanksgiving or Christmas side. It just brings a fresh taste to any dish.
  • You can add a few mint leaves (chopped) to this for a nice fresh mint flavor. I do this on occasion when I have an abundance in my mint garden. Add a few thyme leaves for an earthy balance of flavors.
  • You can do half lemon and half orange juice to make this a “citrus” flavor. It works wonderfully.
  • Don’t be scared to mix and match any fruit that you want. If you don’t have one, leave it out. If you can’t have one, leave it out. Want to add more? Add more or less. Don’t like pecans? No problem. Just simply swap it out for a nut or seed of your choice. If you are using seeds, I would do 1/4 c. Unless you want more, then simply add more. The sky is the limit.
  • Add 1/3 cup of chocolate chips for a tasty treat. Chop up some chewy caramel candy for a caramel apple flair. So good.
  • Tweak to your liking and enjoy!
