
This recipe right here is a summer staple. It is super easy and so good. It is the perfect side dish to any BBQ or get-together. It is not spicy, but a perfect balance of delicious flavors. Now I like to cook these in a milk bath, but you can also grill them or put them in the air fryer. This is up to you. They are all so good and offer a different flavor profile depending on which you choose. I will give the milk bath recipe, but I will put the others in the notes section at the bottom.
INGREDIENTS:
Water
1 C. Milk
1 Bay leaf
2 Tsp. Salt
4 to 8 Corn cobs
2 Tbsp. Butter – room temp
1/2 Tsp. Salt
1/2 Tsp. Garlic Powder
1/2 Tsp. Paprika (smoked or plain)
1/4 Tsp. Pepper (I use white pepper, but black pepper works too)
1 Tsp. Dried Parsley
2 Tbsp. Hot honey
DIRECTIONS:
- In a large pot, add the corn and fill up with water to cover the corn by 1/2 inch. Add the milk, bay leaf, and 2 tsp of salt. Stir and bring to a simmer. Do not boil. Cook for 10 to 15 minutes. If your corn is frozen, cook for 15 to 17 minutes.
- In the meantime, in a small bowl, add the butter, salt, garlic powder, paprika, pepper, parsley, and hot honey. Mix together using a small spatula or spoon until well combined. Set aside until the corn is done.
- When the corn is done, remove from the pot and place on a serving platter or plate. Using a pastry or silicone brush, brush the butter mixture all over the corn on all sides. Make sure that the corn is well coated with the mixture.
- Serve warm.
NOTES:
- For the grill: Coat the corn with the butter mixture and wrap in tin foil tightly. Place the wrapped corn on the grill and cook for 12 to 15 minutes or until hot. This will vary depending on how hot your grill is. You can unwrap them and check after 12 minutes and go from there. Remove and serve.
- For the air fryer: (Preheat the air fryer 5 minutes before cooking.) Brush the corn with a bit of oil. I do not like to add spices to the corn before adding it to the air fryer, as it tends to burn rather quickly. So just brush with a bit of oil and place in the air fryer. Cook at 400* for about 15 to 18 minutes, flipping halfway through. It should have a nice char to it. You can check it sooner if you like. Remove the corn and place it on a plate or serving platter, and brush the butter mixture over the corn, making sure to coat it well.
- I like doing the milk bath because I find that the corn stays juicier, but I also enjoy the other ways too. It just depends on which flavor background profile I am going for. To each their own, and you choose which you would like to try.
- If you want this a bit more spicy, you can add red pepper flakes, hot sauce of choice, or cayenne pepper. Add as much as you prefer to your heat tolerance.
- You can also drizzle a bit more hot honey over the corn before serving if you like.
