Sweet And Sour Carrots

INGREDIENTS:

1 lb carrots, halved and cut into 3-inch pieces

2 tbsp apple cider vinegar

1 -2 tbsp sugar or maple syrup

1 clove garlic, minced

salt

red pepper flakes

1 tbsp parsley, chopped

DIRECTIONS:

  1. In a steamer basket over a little bit of water in a pot, steam the carrots for 15 minutes or until tender.
  2.  In a saucepan over medium-low heat add the apple cider vinegar, sugar, garlic, and salt. Cook for about 3 minutes or until combined and slightly thick.
  3. Add the red pepper flakes to taste and toss in the carrots and parsley. Toss to coat well.
  4. Pour into a serving dish and serve.
