Carrot And Yam Puree


4 carrots, washed and diced

1 onion, diced

3 cloves garlic, minced

salt and pepper

2 yams, peeled and diced

4 cup vegetable broth


  1. In a large pot add a little of the vegetable broth. Add the carrots, onion, garlic, salt, pepper, and yams. Cook 2-3 minutes.
  2. Add the remaining broth and cook for 20-25 minutes or until the potatoes and carrots are tender.
  3. Add the mixture ( in batches) to a blender or processor or you can use an immersion blender. Blend until completely smooth. You might not need all of the liquid. Check for seasoning and add more if needed.
  4. Pour into a serving dish and serve.
