4 carrots, washed and diced
1 onion, diced
3 cloves garlic, minced
salt and pepper
2 yams, peeled and diced
4 cup vegetable broth
- In a large pot add a little of the vegetable broth. Add the carrots, onion, garlic, salt, pepper, and yams. Cook 2-3 minutes.
- Add the remaining broth and cook for 20-25 minutes or until the potatoes and carrots are tender.
- Add the mixture ( in batches) to a blender or processor or you can use an immersion blender. Blend until completely smooth. You might not need all of the liquid. Check for seasoning and add more if needed.
- Pour into a serving dish and serve.
