Blackbean, Corn And Red Onion Salad With Sundried Tomato Vinegarette

INGREDIENTS:

1 can black beans, drained and rinsed

1 c corn

1/2 red onion, thinly sliced

2 c. spinach, chopped

2 c. lettuce, chopped

1/4 c. sundried tomatoes, drained and chopped

4 tbsp sundried tomato oil

2 tbsp white wine vinegar

salt and pepper

DIRECTIONS:

  1. In a bowl combine the lettuce, spinach, red onion, corn, black beans, and sundried tomatoes.
  2. In a small bowl combine the sundried tomato oil, vinegar, salt, and pepper. Whisk together until combined.
  3. Pour the vinegarette over the bean mixture and toss well. Chill 1 hour before serving. Toss before serving.
