1 can black beans, drained and rinsed
1 c corn
1/2 red onion, thinly sliced
2 c. spinach, chopped
2 c. lettuce, chopped
1/4 c. sundried tomatoes, drained and chopped
4 tbsp sundried tomato oil
2 tbsp white wine vinegar
salt and pepper
- In a bowl combine the lettuce, spinach, red onion, corn, black beans, and sundried tomatoes.
- In a small bowl combine the sundried tomato oil, vinegar, salt, and pepper. Whisk together until combined.
- Pour the vinegarette over the bean mixture and toss well. Chill 1 hour before serving. Toss before serving.
