This is one of my favorite appetizers that I serve at holiday parties or special occasions. It is super easy to make and very delicious. My grandmother would make this for me as a snack when I went to her home to visit.
INGREDIENTS:
1 (10 oz) bag of peas, thawed
1 clove garlic, grated
1/2 cup vegan parmesan cheese
salt and pepper to taste
1/4 cup olive oil
10 slices (1/2 inch thick) vegan baguette
sliced cherry tomatoes
DIRECTIONS:
- In a food processor blend together the peas, garlic, vegan parm, salt and pepper and olive oil until smooth and creamy. Spoon into a bowl and set aside.
- Heat a grill pan over medium heat and place a few slices of baguette into the pan and grill for 2 minutes per side or until they have grill marks and are golden brown. Remove to a plate.
- Take one of the baguette slices and add a little of the pea pesto and top with a few slices of the cherry tomatoes.
You can make this oil-free as well. Simply replace the oil with less water until you get the desired consistency you like. The pesto should be thick but smooth and creamy.
