This one pot pasta is simple and delicious. The only time-consuming part of this is the ingredients but, well worth it. Pre-cut all the vegetables before hand and it makes things so much easier in the cooking process in any recipe.
This pasta has simple ingredients and has only 324 calories. 62 grams of carbs. 3 grams of sugar. 2 grams of fat and 15% protein. It is good for helping you stay on track with loosing or maintaining your weight. It is also travel friendly so you can take it any where with you. I take this to work with me often.
INGREDIENTS:
1/2 tsp season salt (optional)
1/4 tsp red pepper flakes
pepper to taste
1 tsp nutritional yeast
1/4 cup celery, diced
1/4 cup onion, diced
1/2 fresh tomato, diced
1/4 cup navy beans, drained and rinsed
1 cup brown rice pasta
1 1/2 cup water
1/2 cup greens (of choice)
4 to 6 drops of liquid smoke
DIRECTIONS:
- In a medium pot combine all of your ingredients and stir well. Turn heat to medium low and cook for 15 minutes or until the pasta is tender ( Al Dente’).
- ladle the soup in to a bowl and top as desired. You can store the other half in an air tight container and store in the fridge Or you can store in separate containers for a handy lunch during the week.
