Cheddar And Broccoli Rice

If you are craving something easy and simple for lunch, then consider this. Cheddar And Broccoli rice. It is easy to make with very simple and healthy ingredients. Your family will never know it is vegan. I serve this dish often and they still do not know it is vegan. It has a cheesy flavor and the perfect amount of broccoli. With just 361 calories per serving. The recipe I am posting is just one serving. It fills you up and keeps you going. It is travel friendly, So you can take this with you to school or work.

INGREDIENTS:

1/2 cup rice ( rinsed)

1 cup broccoli

1 1/4 cup water

1 tsp better than bouillon ( any vegan flavor will do)

3 tbsp nutritional yeast

1/4 tsp turmeric

1/4 seasoning salt (optional)

Pepper to taste

DIRECTIONS:

  1.  In a small pan with lid ( or single serve pressure cooker) add in the ingredients to the container. Stir to combine. Turn heat to medium and cover with the lid.  Let cook, stirring occasionally to prevent sticking and burning, until the rice is tender to you your liking. remove to a bowl and top with parsley.
  2. If you are using a single serve pressure cooker or rice cooker add all the ingredients to the base container and stir. attach the lid and let time it for  10 to 15 minutes or until the rice is tender.  Be careful opening the lid to the container as the contents are hot. If you are using a pressure cooker please release the steam/pressure before opening the lid to your device. Use an oven mitt or tongs to safely release the pressure. They contents will burn you.
  3.  When the rice is ready just spoon into a bowl or container and eat when ready or take along with you.
