Chimichurri

Steak with chimichurri

Chimichurri is a herby, slightly spicy sauce that you can top on anything. Primarily it is used on steaks or chicken but you can use it on whatever you like. I love making a savory-style toast and adding it to the top for a pop of spicy freshness. It is so good and very easy to make. It is absolutely delicious on top of a steak or used as a dip for fries.

Let me share with you how I make it.

INGREDIENTS:

1/2 C. Olive oil
2 Tbsp. Red wine vinegar
1/2 C. Finely chopped parsley
3 Cloves garlic – minced fine
2 Tsp. Red pepper flakes OR 1 small hot red pepper – seeded and diced fine
1/2 Tsp. Dried oregano
1 Tsp. Salt
1/4 to 1/2 Tsp. Pepper

DIRECTIONS:

  1. In a bowl combine all of the ingredients and stir or whisk to combine well. Check the seasoning and adjust to taste. Cover with plastic and chill for 20 minutes or overnight.
  2. Let come to room temp before serving. This is used to finish a dish or to baste meats while cooking.
  • Store in an airtight container in the fridge for up to 3 weeks. Or you can freeze it in Ice cube trays and keep it in a ziptop bag in the freezer for up to 3 months. Just thaw before using. This is a small batch so we typically use all of it. lol.
