I love Arby’s but, we live don’t live to close to an Arby’s. We have to go two towns over and going to get their roast beef and cheddar is a feat… to say the least. To appease our love of Arby’s I created this recipe. It is a more bold take on the roast beef and cheddar but it is so good and fairly easy to make. The only thing you really have to make is the sauces and then assemble the sandwich. Pretty easy… So let’s get started.

INGREDIENTS:
SAUCE-
1/2 c. ketchup
1 tsp Worcestershire sauce
2 to 4 tbsp water
1 tsp apple cider vinegar
1/4 tsp garlic powder
1/2 tsp hot sauce
1/4 tsp paprika
1/4 tsp seasoned salt
salt and pepper- to taste
CHEDDAR SAUCE-
6 oz. Velveeta cheese
1/4 c. shredded cheddar cheese
2-3 tbsp milk ( more if needed)
1/8 tsp paprika
1/8 tsp dry mustard
1/8 tsp seasoned salt
4-8 onion buns or buns of choice
12 oz roast beef – your preference
DIRECTIONS:
- Preheat the oven to 375* and place the buns on a sheet tray evenly. Let the buns warm through. You don’t want them to crisp. You can also skip this step if you prefer. Remove the buns and let them cool. Set aside.
- In a sauce pan combine all of the ingredients for the sauce and stir to combine. Bring to a simmer and remove from heat. Cover and set aside.
- In a separate sauce pan combine the two cheeses for the cheddar sauce along with the milk. Whisk until smooth. This will take a minute or two to come together. When the cheeses are smooth add the remaining ingredients for the sauce and whisk to combine well. If the sauce is to thick for you, you can add in more milk a little at a time until you reach the desired consistency. You want the mixture to be slightly thick but pourable. The sauce will thicken as it cools. You can always heat the mixture back up via stove top or microwave.
- When you are ready spoon some of the red sauce on the bottom bun, top with the amount of roast beef of your choice, drizzle over the cheddar sauce, spoon more of the red sauce on the top bun and place on top. Serve
Serve with desired sides. I usually serve these with fries or broccoli slaw but you can serve however you prefer.
