Here is another recipe I introduced to my family This week. It is made with simple ingredients which packs a big flavor punch. It is very creamy and delicious. It only has 7 ingredients. Yes! 7 ingredients.
I often make this the night before so I can take this pasta along with me to work or have it for lunch the next day while I am working at home. If you like tahini you are going to love this recipe.
INGREDIENTS:
1/4 cup tahini ( I use either Ethiopian or Arabic tahini )
1 to 2 tbsp maple syrup ( depending on how sweet you want your pasta dish )
1 tbsp vegan soy sauce or coconut aminos
1 tsp garlic powder
1 tsp onion powder
3 cups of mixed vegetables ( I used California blend I picked up at the local grocery store)
1 lb pasta of choice ( I used gluten-free spaghetti pasta )
DIRECTIONS:
- In a large pot bring water to a boil and add the vegetables and pasta.
- In a large bowl combine the tahini, maple syrup, garlic powder, onion powder and soy sauce. The mixture will become thick. You can use some water to slightly thin it out. Make sure the mixture is still slightly on the thicker side as the pasta will add more water to the sauce.
- When the pasta and veggies are done, use a pasta scoop to scoop out the pasta and veggies into the sauce and toss to coat well.
- Pour the mixture into a serving bowl and serve.
