This is an easy recipe that you can make the night before, and take along with you the next day. I often take this with me to work. It is really easy to make and super delicious.
INGREDIENTS
3/4 cup oats
1 cup vanilla flavored yogurt ( I use vanilla flavored coconut yogurt)
1 tbsp chia seeds
1 tbsp flax seeds
1/2 almond milk
maple syrup (optional)
1 peach diced into cubes
DIRECTIONS
- in a mason jar combine the oats, chia, flax, yogurt and almond milk. Stir the ingredients together and top with the maple syrup and peaches. Attach the lid and store in the refrigerator overnight.
In this recipe, I often use different flavors of yogurt and fruits. It depends on what I want at the time that I make the overnight oats. I mainly use vanilla yogurt because it is versatile and you can add any flavor to it.
Adding the yogurt to the overnight oats adds a thick creaminess that just bumps up the goodness of the oats, you get your probiotics and calcium. Adding the chia and flax you get more fiber and it helps keep you fuller for longer. Adding the fruit help you digest your food better and plus it is just delicious and good for you.
