Strawberry Baked Oatmeal

INGREDIENTS:

1/4 c maple syrup
2 cups rolled oats
1 tsp cinnamon
1 tsp baking powder
pinch of salt (optional)
2 c plant milk
1/2 c water
4 dates, chopped
2 tbsp flax meal
6 tbsp water
1 tsp vanilla
2 c strawberries, diced
1/4 c coconut flakes
1/2 c walnuts
3 tbsp oat flour
5 tbsp coconut flour

DIRECTIONS:

  1. Preheat the oven to 375*
  2. In a small bowl combine the flax meal and the 6 tbsp water and stir to mix. set aside.
  3. In a large bowl combine the oats, cinnamon, baking powder, coconut flakes, salt, oat flour, and coconut flour. Mix well.
  4. Add the plant milk, water, maple syrup, dates, strawberries, vanilla, walnuts, and the flax egg ( the flax and water mix) and stir to mix well.
  5. lightly spray or grease an 8×8 inch pan with oil. Pour the mixture into the pan and spread out evenly.
  6.  Bake at 375* for 60 minutes or until golden brown and cooked through. Remove from the oven and allow to cool before cutting into squares. serve.
