Gnocchi With Marinara Sauce

This is a super simple and easy to make recipe that packs big flavor. Soft pillows of potato gnocchi tossed in a homemade marinara sauce. From start to finish, this will be on your table in less than 45 minutes. Sure to please and very filling.


2 medium potatoes, peeled and cubed

1/4 cup oat flour

3/4 cup flour

1/2 tsp salt (optional)

1 tsp vegan butter (optional)

1 tomato, cubed

1 can crushed tomatoes

1/2 tsp salt (optional)

1/2 tsp pepper

3/4 tsp garlic powder

1 tsp dried minced onion

1 tsp Italian seasoning

2 tbsp nutritional yeast

1/2 tsp sugar

2 cups loosely packed spinach


  1. In a medium-sized pot add the potatoes and fill with water to cover the potatoes. Cook over medium heat until tender. About 15 minutes. Drain. Using a potato masher, smash the potatoes until completely smooth. Set aside to cool.
  2. Add the salt, oat flour, and flour and stir to combine. Pour the mixture onto your counter or board and knead the dough until smooth and a ball forms. Cut the dough into four equal pieces and set 3 aside. 20180423_182048.jpg
  3. Roll the dough pieces into logs about 1/2 inch thick and then cut into 1/2 inch pieces. Set the pieces aside. Using a fork gently roll the dough on the fork to make an indention in the dough. Set the dough aside until all the dough is formed.
  4. Bring a large pot of water to a boil and add the dough pieces in batches to the boiling water. Do not stir. Let the pieces cook. They will float up to the top of the water when they are done. Using a slotted spoon remove the gnocchi to a bowl to slightly cool. 20180423_182709.jpg
  5. Over medium heat add the butter (if using) or you can add a tablespoon of water and the cubed tomatoes. Cook for 5 minutes. smash with a fork or the back of a spoon. Add in the crushed tomatoes and cook for 5 minutes. Add the salt, pepper, sugar, garlic powder, dried onion, nutritional yeast, and spinach. Stir to combine and cook for 5 minutes or until the marinara is slightly thickened. Check the seasonings and adjust to taste. The salt is optional.
  6. Add the gnocchi and toss gently to coat with the marinara.
  7. SERVE>

You can top with basil or more nooch or vegan cheese. However, you like. This is a very filling and a really delicious meal. You can serve this with a side salad if desired.IMG_20180423_194221_068.jpg
