Pumpkin Spice Energy Bites

I love these little energy bites. They are so good and filling. They are travel-friendly as well. Take them on the go with you to school or work.

INGREDIENTS:

1/2 cup oats

1/2 almond meal or flour of choice

1/4 cup peanut butter or almond butter

1/4 cup pumpkin puree (not pumpkin pie filling)

1/2 tsp pumpkin pie spice

2 tbsp maple syrup

DIRECTIONS:

  1. In a food processor combine all of the ingredients and pulse until it forms a slight dough consistency.
  2. You can mix this in a bowl until combined as well if you do not wish to use a processor.
  3. Remove the dough to a bowl and roll into balls and place in a storing container.

These last up to 2 weeks in the fridge but you will eat them all before then. They are so yummy
