Cheddar Rice With Broccoli

This is the easiest and most delicious rice I’ve ever made. Its all done in one pot and it makes a delicious lunch. Simple ingredients but packs a tremendous flavor.


1/2 cup rice ( rinsed)

1 cup chopped broccoli

3 tbsp nutritional yeast

1 tsp onion powder

1 tsp garlic powder

1 tsp better than bouillon vegetable flavor

1 1/4 cup water


  1. In a small saucepan over medium heat combine all of the ingredients and allow the mixture to come to a boil. Stirring occasionally.
  2. Place a lid on top and cook for about 10 to 15 minutes or until the rice is tender stirring occasionally to prevent sticking and burning.
  3. When the rice is tender transfer to a serving bowl and top with more nutritional yeast. Serve warm.

This recipe is travel-friendly so you can take it to work or school.  You can also double the recipe and have this as a side dish for dinner.
