Christmas Quinoa Salad

This is a family favorite that I serve every year at Christmas. It has minimal ingredients and a more healthy option than most  Traditional Christmas salads. It has good ingredients, healthy fats and packed with flavor. You can serve this room temperature or chilled from the fridge.

INGREDIENTS:

1 1/4 cup Spinach, chopped into small pieces

1 cup cooked quinoa

1/2 cranberries

For the dressing:

2 tbsp maple syrup

1 tbsp dijon mustard

balsamic vinegar

1/4 cup olive oil

DIRECTIONS:

  1. In a bowl combine the maple syrup, mustard, vinegar and the olive oil and whisk together until well combined. Set aside.
  2. In a large bowl add the quinoa, spinach, and cranberries. toss well to mix.
  3. Pour over the dressing and toss to coat well.
