Chickpea Salad

This is a delicious take on the traditional “tuna or chicken salad” It is so flavorful and crisp and creamy. I spent so much time making the perfect combo for this recipe. So many failed attempts and this recipe hit the spot for me and my family. They love it.

INGREDIENTS:

1 can chickpeas drained and rinsed

1/4 cup vegan mayo or aquafaba mayo

1/2 cup grated carrot

1/2 apple grated

1/4 cup cranberries or raisins

1/2 celery stalk chopped small

salt and pepper to taste

1/4 tsp garlic powder

1/4 tsp onion powder

DIRECTIONS:

  1. In a large bowl add the chickpeas and mash with a fork until slightly smooth but still has some small chunks in to.
  2. Add in all of the other ingredients and stir until fully incorporated. Taste and adjust seasonings to taste. Store in an airtight container.

You can serve this on top of lettuce/ spinach salad, You can serve with crackers as a dip you can top this on bread as a sandwich. It is so versatile and delicious.
