When it comes to food most people eat with their eyes. But not only does it have to look good it has to taste good. So many people are scared to eat healthy because they think all healthy food has no flavor or tastes bad. Here is a prime example of good looking and good tasting food. It is very big on flavor and super healthy for you. You have so many wonderful colors and flavors in this dish. It is simply put together and simply delicious.
INGREDIENTS:
For the salad:
15 oz black beans drained and rinsed
15 oz kidney beans drained and rinsed
15 oz cannellini beans drained and rinsed
1 yellow bell pepper seeded and chopped into small pieces
10 oz yellow corn thawed
1/2 red onion diced into small pieces
1/4 cup cilantro or parsley Chopped
For the dressing:
1/2 cup red wine vinegar
juice of 1 lime
2 tbsp maple syrup
1 tsp salt or to taste
1 garlic clove minced
1 tbsp cumin
1/4 to 1/2 tsp red pepper flakes
1/2 tsp chili powder
DIRECTIONS:
- In a small bowl whisk together all of the ingredients for the dressing and set aside to marinate.
2. In a large bowl combine all of the ingredients for the salad and combine well. Add the dressing and toss to coat well. Chill in the fridge for 30 minutes or until ready to serve. the flavors will develop.
This salad is so colorful and delicious. It is good on its own for lunch or as a side dish. It packs such a wonderful flavor. You can also serve this as a salad with greens, as a lettuce boat, and over nachos. It is so good in so many ways. It is sure to please you however you serve it.
