Maple-Flax Oat Pancakes

Pancakes! Who does not love a good pancake!? They are soft, fluffy and so delicious. You can add anything you want or top it however you like. The sky is the limit when you make pancakes. You can make them small, large, make designs or faces. I created this recipe with Non-Vegans in mind. Something that they would not know was vegan unless you told them. They are refined sugar-free and the coconut oil is optional. You can sub the regular flour for gluten-free flour of your choice. I often sub for almond meal or coconut flour. You can also eliminate the salt as well. However, you make these pancakes they will be really good and fluffy.

INGREDIENTS:

1 Flax Egg ( 1 tbsp flax plus 3 tbsp water)

4 tbsp Oat Flour ( 4 tbsp oats blended in a processor until flour like)

3/4 cup Flour

Pinch of Pink Salt

1/4 tsp Baking Soda

1 tsp Baking Powder

2 tbsp Maple Syrup

1 tsp Vanilla Extract

1 tbsp Coconut Oil ( melted)

1/2 cup Rice Milk

1 tsp Apple Cider Vinegar

DIRECTIONS:

  1. In a small bowl combine the flax and water and mix well. Set aside to gel.
  2. In a medium bowl whisk together the oat flour, salt, flour, baking soda,  and baking powder. Set aside.
  3. in a small bowl or measuring cup combine the maple syrup, vanilla, coconut oil, rice milk and apple cider vinegar. mix well.
  4. When the flax has gelled combine with the wet ingredients and mix well. Pour over the dry ingredients and whisk until just combined. Using a mixing spoon scrap the sides to incorporate all the mix.
  5. In a large cast iron or non-stick skillet ( over medium heat) melt over some vegan butter or coconut oil and spread over the bottom of the pan. when the pan is hot add in about 1/4 cup or so of the batter to the pan and spread into a circle to cook evenly.
  6. When the bottom is brown ( about 2-3 minutes or so) and the bubbles hold when they pop gently flip the pancakes over and let cook another 2 minutes or so until cooked through and no more batter is visible. Remove from the pan and place on a plate until the remainder of the pancakes is finished.

Top the pancakes however you like. I topped mine with fresh strawberries, Pb2 mixed with water to make a runny peanut butter, and maple syrup.

You are sure to enjoy every bite of these fluffy, slightly sweet pancakes. These are so delicious guys! And the Non-vegans/vegetarians are not going to know that they are vegan/vegetarian. My Hubby is a non-vegan/vegetarian and he has no idea! He loves them.

Add in 1/2 tsp of Cinnamon for a slight Cinnamon background flavor. Add blueberries and Grated Lemon Peel for a fresh tasting pancake. Add in 1/2 cup pumpkin and 1 tsp pumpkin pie spice for a fall taste. Add in Chopped Strawberries and grated Lime Zest for refreshing summer flavor. Add in amounts to taste as tastes vary on these spices and flavors. Enjoy peeps!
