These cupcakes are on rotation in our house quite often. They are so easy to make and they are so good. I love these cupcakes because they go perfectly with any style frosting or glaze that you want to add to it. I like strawberry, my daughter likes chocolate, and my hubby likes plain ol’ vanilla frosting… well, most times anyway. I guess it is just what we are feeling that day. lol.
I typically make these into regular sized cupcakes but you can make these into mini cupcakes or mega cupcakes. lol. You can even make these into doughnut shaped cupcakes. They are delicious either way.
Let’s get started!
INGREDIENTS:
1 3/4 C. All-purpose flour
1 1/4 Tsp. Baking powder
1/4 Tsp. Salt
1 Stick Butter – Softened
1 C. Sugar
2 Eggs – Room temp
2 1/2 Tsp. Vanilla or vanilla paste
2/3 C. Milk – Room temp
DIRECTIONS:
- In a bowl whisk together the flour, baking powder, and salt. Set aside. Pre-heat the oven to 350*. Grease a muffin pan and set aside.
- In a separate bowl beat together the butter and sugar until fluffy and slightly pale. This should take about 2 to 3 minutes.
- Add the eggs and vanilla. Beat until creamy and smooth. Be sure to scrape down the sides and incorporate into the batter.
- Add half of the flour and whisk together. Add the milk and whisk together until smooth. Add the other half of the flour and fold into the batter with a spatula. This ensure that the batter does not get over mixed.
- Scoop the mixture into the prepared muffin pan about 3/4 full. Bake for 18-20 minutes or until a toothpick comes out clean. Remove and let cool in the pan for 5 minutes or so and then remove to a wire rack to cool completely.
- Once cool you can frost as desired. Make your own frosting or use some Store-bought frosting.
