This is a very simple yet delicious side dish. It pairs well with any Mediterranean dish. When I make this, I typically put it on everything. It adds such a wonderful flavor to any dish or meal. Keep this in an airtight container in the fridge for up to 4 to 5 days.
INGREDIENTS:
3 small cucumbers – diced fine
2 tomatoes – seeds removed and diced fine
1/2 onion – diced fine
2 tsp dried parsley or 1/4 cup fresh (chopped)
Juice of 1/2 lemon
Zest of 1 lemon
1 tsp dried dill or 1 tbsp fresh (chopped)
Salt and pepper – to taste
2 to 3 tbsp olive oil
DIRECTIONS:
- Combine all of the ingredients in a bowl and cover with a lid or plastic wrap. Place in the fridge for 1 hour or up to overnight. Stir before serving. Adjust seasonings to taste. Store covered in the fridge.
- You can add this to any Mediterranean dish or pasta. Cook up some pasta and toss in the Israeli salad for a delicious lunch or a meatless dinner.
- Add plain greek yogurt for a wonderful sauce to top any dish.
- Serve as a side by itself.
- Cook some rice or pasta and add some of the Israeli salad as well as some grilled chicken for a delicious dinner.
