This is a very good and easy recipe that you can put on anything. I like putting these pickled onions and beats on hot dogs, bbq, sandwiches and pretty much the like. It requires little to no work at all and only takes a small amount of time to wait. Here is what you will need:
INGREDIENTS:
1/2 onion, very thinly sliced
1 jar of pickled beets ( about 4 out of the jar) thinly sliced
1/4 cup of the pickled beet juice
1/2 cup apple cider vinegar
1/2 tsp salt
2 tbsp sugar
water if needed
DIRECTIONS:
- In a mason jar with a fitted lid add the thinly sliced onions and beets. Set aside.
- In a saucepan add the apple cider vinegar, beet juice, salt and sugar and turn heat to medium. Bring to a boil to dissolve the salt and sugar.
- pour over the onions and beets in the mason jar until full. leave the top portion of the lip of the mason jar empty to prevent spillage. If you need water to fill up you can add hot water to the jar to fill the rest of the way up.
- Attach the lid and let sit on the counter for 1 hour. After this, you can use the pickled onions and beets to top for food. Store in the fridge.
