Crock-Pot Red Beans And Rice

INGREDIENTS:

1 onion, diced

1 clove garlic. minced

1/2 lb vegan andouille sausage, cubed

1 lb red beans, soaked, drained

1-quart water

salt and pepper

DIRECTIONS:

  1. The night before place the beans in water and allow them to soak overnight. Drain and rinse before using.
  2.  Put all of the ingredients in a crock-pot and set to high for 4 hours or low for 8 hours.
  3. When the beans are done check for seasoning and adjust to taste.
  4. Ladle over rice and serve.
