Teriyaki Tofu

I love Asian, Chinese, South Korean, Vietnamese, Japanese and Mongolian dishes. There is something about these dishes that are simply delicious. There are so many vegan and vegetarian dishes that they have created over centuries of cooking. They have simple ingredients and a lot of flavor in every dish. In this blog post, I will be sharing with you one of my simple and yet very delicious tofu recipes.

When I was a nonplant based eater a while back, I loved teriyaki chicken. This is my take on the dish using tofu and very few ingredients.

INGREDIENTS:

1 block firm tofu

1/2 cup soy sauce

1/4 cup brown sugar

3 cloves garlic, minced

1 tsp grated ginger

1/2 tsp white pepper

2 tsp tapioca starch or you can use cornstarch ( both work well)

DIRECTIONS:

  1. Remove the tofu from the package and wrap in a kitchen towel. place on a baking sheet and place a baking sheet on top. Place a heavy item on top of the baking sheet to press the extra water from the tofu. Let the tofu sit for about 20 minutes. After 20 minutes remove from the cloth and cut in half and that half into 1/2 inch thick slices. Cut those slices into cubes.
  2. In a large bowl combine all of the remaining ingredients and whisk together to combine. Place the tofu cubes into the bowl and toss to coat evenly. Let the tofu marinate for about 20 minutes.
  3. In the meantime, heat up a large skillet and add the tofu cubes. Let the tofu brown on all sides.  This takes about 2 minutes per side. When the tofu cubes are browned on all sides add in the sauce. Cook until the tofu is coated and the sauce is thickened.
  4. Remove from the heat.

I like to serve this dish with rice and a side of sauteed vegetables and bok choy.
