Pasta Sauce

In this post, I will walk you through one of my favorite pasta sauce recipes. It is time-consuming but very easy to make and has very good and whole food ingredients.  My family and I simply love this pasta sauce. I am sure you will too.

You can use this sauce as you would any other pasta sauce and it freezes well and it is travel-friendly.

INGREDIENTS:

1 onion

1 carrot

1 celery

2 cloves garlic

2 (28 oz) can crushed tomatoes

1 tsp coconut sugar

salt and pepper to taste (optional)

1 tsp parsley

1 tsp  Italian seasoning

water

DIRECTIONS:

  1.  In a food processor combine the onion, garlic, carrot and celery and pulse until very small chunks but not completely pureed.
  2. In a large nonstick skillet add about 2 tbsp of water over medium heat and add the vegetables and cook until tender. About 10 minutes.
  3. Add the remaining ingredients and stir to combine. Bring the mixture to a boil and reduce the heat to low and simmer for 45 minutes. Add more water if the mixture becomes too thick. Add in 1/4 cup water at a time. When the pasta sauce is done you can check for seasoning and add more if needed.

It is simple and delicious. Time-consuming, yes, but well worth it.
