If you like a spin on new things then this is the recipe for you. This takes tofu to a whole new level. This recipe isn’t classified a healthy recipe because of the marmalade added to the dish. The marmalade brings this dish alive. This is more of an elegant dish that you can dress up. It is deliciously elegant.
INGREDIENTS:
1 lb tofu, Pressed and cut into 1/2 inch slices
Water
2 large onions, thinly sliced
1/4 cup orange marmalade
2 tsp rosemary, chopped
1/2 tsp thyme, chopped
salt and pepper
1/4 cup balsamic vinegar
2 tbsp brown sugar
2 cloves garlic, minced
DIRECTIONS:
- In a large non-stick skillet over medium heat add a little bit of water and the onions. Cook the onions until the onions are brown. This takes about 10 minutes. Add more water if needed to keep the onions moist and to keep from burning.
- After 10 minutes add the marmalade, 1/2 the rosemary, thyme, salt, pepper, all of the vinegar, brown sugar, and garlic. Toss to coat evenly. Cook for an additional 20 minutes adding more water if needed.
- While this is cooking take the remaining salt, pepper, rosemary, and thyme and sprinkle over the tofu. Gently press into the tofu. Heat up a grill pan over medium heat and allow the pan to get really hot. Let it heat up about 3-4 minutes or so. The pan will smoke just a little. Carefully add the tofu to the grill pan and let cook 2 minutes per side or until you have great grill marks on both sides. Remove from the pan and place on a serving tray.
- When the onions are done carefully spoon over the orange onion jam over the tofu.
I like to serve this with brown rice and grilled/steamed vegetables. This recipe requires a little time but oh so worth it in the end. This is such a delectable dish.
