This is a great recipe that goes great with toast or alongside your meals. It has a complex flavor of chai along with the sweetness of the apricots and cranberries with the tartness of the pomegranate juice. I love having this alongside any Indian meal or for breakfast on toast.
INGREDIENTS:
1 cup Pomegranate juice
1/3 cup cranberry juice
1 2/3 cup water
1 3/4 dried apricots, chopped small.
3/4 cup dried cranberries
1/3 cup dried cherries
1/4 tsp salt, optional
1 bag of chai tea
3/4 cup toasted pecans, chopped small
2 tbsp maple syrup
DIRECTIONS:
- In a large pot add the water, both juices, apricots, cranberries, cherries, salt and the chai tea bag. Stir gently and bring to a boil over medium heat. reduce heat to low and let cook stirring occasionally until thick and the liquid is almost reduced.
- Add the chopped pecans and stir to combine well. Add the maple syrup and stir to combine. Pour into a serving bowl and cover with a lid and chill about 2 to 3 hours. serve cold.
