This is a hearty stew perfect for cold nights when you just want to throw on your pajamas and wrap up in a warm blanket and watch a good movie. This stew warms you from the inside out. It is so yummy and filling.
INGREDIENTS:
1 onion diced
3 celery stalks diced
3 carrots diced
1/2 lb mushrooms halved and quartered
1 1/2 tbsp garlic minced
5 cups water
4 potatoes peeled and diced
1 tbsp paprika
1 1/2 cup peas
2 tbsp parsley
salt and pepper to taste
1/4 cup tomato paste
DIRECTIONS:
- In a large pot or an instapot add a little water over medium heat or sautee and add the onion, celery, and carrot. Cook for 8 to 10 minutes. Add more water if needed.
- Add the garlic and mushrooms and cook for about 3-5 minutes.
- Add the remaining ingredients and stir to combine. Cover and cook 1 hour on the stove an about 30 to 40 minutes in the instapot.
- Remove from heat or let the instapot release and serve with rice or crusty bread.
