
Spiced Blueberry Oats. A simple, delicious and healthier breakfast option to keep you satiated. This recipe has fresh ingredients with no salt added and better yet, No butter. These oats do not skimp on flavor either.
These Oats are a great compliment to the onset of fall weather. The spiced oats are warming and filling, you get the burst of the fresh blueberries and the crunch from the pumpkin seeds…… Oh yeah, So yummy!
INGREDIENTS:
1/2 cup of quick oats
1/2 cup of Coconut milk
3/4 cup water (depending on how thick you like your oats)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp vanilla
1 tbsp nutritional yeast
2 pkg truvia sweetener
1 tsp chia seeds
1/2 tsp hemp or flax seeds
DIRECTIONS:
- In a saucepan over medium heat add in the coconut milk, water, the spices and nutritional yeast. Bring to a slight simmer. Add in the Oats and stir until thickened and cooked through. Remove from heat and add in the sweetener, vanilla and blueberries. Stir to combine.
2. Pour in to a bowl and top however you like. I topped mine with fresh strawberry halves, Pumpkin seeds, Chia and hemp seeds.
As easy and simple this is, It is packed with fall spices and flavor. You can easily double this recipe or add/omit any spices you want to suit your liking. The addition of the nutritional yeast adds a buttery flavor along with additional nutritional benefits. A healthy and nutritionally packed breakfast.
You can also make this as overnight oats. Place the warm milk mixture in a jar with the oats and all other ingredients and stir. Apply the lid and let set in the fridge over night. Bring a side of fresh fruit to eat along with it. You can eat as is or heat in the microwave to warm through if you like.
