This crisp, tangy, and super refreshing slaw is perfect for summer. It is also great for picnics at the beach, lunch, BBQ’s, and summer get-togethers. There is no mayo in this, so you don’t have to worry about it sitting out a bit or traveling with it.
This is great for tacos, BBQ sandwiches, or as a side dish to all of your BBQ dishes. This is also something that I make quite often when I make tacos, BBQ, or when I don’t want a heavy side, and also something crunchy. It is simple to throw together and also very good.
Let’s get started.
INGREDIENTS:
1/2 Head green cabbage – shredded
1/2 Head purple cabbage – shredded
1/4 Onion – thinly sliced ( I use Vidalia or red onion)
2- 3 Scallions/green onion – Sliced
Juice of 2 limes
2 Tbsp. Olive oil
2 Tsp. Honey
Salt and pepper to taste
1 Carrot – grated (optional)
1/4 C. Chopped Cilantro or parsley
DIRECTIONS:
- In a bowl, combine both cabbages, onion, scallions, and carrots (if using).
- Squeeze over the lime juice and add the oil, honey, cilantro/parsley, salt, and pepper. Toss together until well combined. Taste and adjust the seasoning, and add more salt and pepper if needed.
- Cover and chill for 1 hour. Toss before serving.
- You can sub out the lime for lemon juice or orange juice. This will switch up the flavor. You can also add the juice of 1 lime, juice of 1/2 of a lemon, and about 1/4 of the juice of an orange to make this a “citrus” flavor.
- Throw in some thinly sliced jalapenos for a kick of heat.
- You can omit the honey if you want a more tangy flavor. I find the honey balances out the flavors well.
- Keep covered in the fridge until ready to transport or serve. Toss before serving.
- Swap out the honey for hot honey for a pop of flavor and heat. This will give it a mild heat without being too overbearing, as with the jalapeno. Throw in some Tajin as well if you are feeling a bit “spicy”. This will bump up that flavor and add a tangy, mild heat. I do this as well, and it is so good. I add about 1 Tbsp. You can adjust to your taste preference. It also depends on the flavor profile you are going for. \
