
When it comes to easy side dishes, I am all for them. We spend so much time working on and preparing the main dishes that we often forget about side dishes. This easy and simple French Onion Fettuccine is not only easy but delicious. You can pair this side with chicken, pork, or beef dishes. Throw in some steamed veggies and you have a filling and nutritious meal. So let me share with you how I make this easy side dish.
INGREDIENTS:
1 Regular Pkg of Fettuccine pasta
1 Can of Beef Consomme
1 Can of French Onion Soup
2 Tbsp Olive Oil
2 Tbsp Butter or Ghee
1 Large or 2 Small onions – thinly sliced
Salt and pepper – to taste
1 Tsp Italian Herb Blend
2 Cloves Garlic – minced
Grated Cheese- for topping: see notes
Chopped Parsley- for topping
DIRECTIONS:
- Bring a large pot of water to a boil over medium-high heat and add 2 tbsp of salt. Stir and bring back to a boil.
- Add the olive oil and butter to a large skillet and allow the butter to melt. Make sure the heat is at a medium-low to low temperature.
- Add the onion, salt, pepper, and Italian herb blend and stir to combine. Allow this mixture to cook for about 10 minutes. Meanwhile, your water should be coming up to a boil.
- Add the pasta to the water and allow it to cook for about 5 to 6 minutes. The pasta will not be done, but slightly under Al dente.
- Add the garlic to the onion mixture and stir. Cook for 30 seconds or until fragrant. Add the consomme and French onion soup to the onions and stir to mix well. Bring the mixture to a simmer and allow to cook for about 5 minutes to slightly reduce.
- Add the pasta to the onion mixture and toss to coat well. Cook the pasta until the pasta is tender. This should take another 5 minutes or so. Make sure to stir the pasta to prevent it from sticking to the bottom of the skillet.
- When the pasta is tender, remove it from the heat. Sprinkle on your favorite cheese. Cheese options are below. Toss the mixture to combine. Sprinkle over some parsley if you like. serve.
- This is such an easy side dish, and if you do not have fettuccine on hand, no problem. You can use whatever style of pasta you have on hand, and it will turn out just as delicious.
- You can use your favorite style of cheese. I wouldn’t recommend cheddar, though. Here are some options. Parmesan, gruyere, swiss, provolone, gouda, or mozzarella. I like to grate my own cheeses, but if you have pre-shredded, then that will also work.
- I like to cook the pasta separately for this dish, but you can add the pasta to the onion mixture and add about a cup or so of water, and let it cook until the pasta is tender. If you need more water to finish up the pasta, you can add more if needed. Be sure to check the pasta to make sure it is cooked through and tender to your liking.
- I like to serve this with grilled chicken or steak, but you can serve this however you like. Add some veggies to make it a complete meal.
