This is a super easy and delicious recipe that we love, and it is very filling. It is very easy to put together and is on the table in less than 30 minutes. It is a great alternative to tacos, and you can add all of your favorite toppings.
We love this recipe because I can cook up some tasty beef with sauce and throw it in the oven with some cheese and tortilla chips and add our favorite taco toppings. It is a whole meal in one or you can cook up some of your favorite sides to go along with it. However you serve this you are going to love it. I will have some additions to add to this dish below.
Let’s get started.
INGREDIENTS:
1 Onion – Diced
1 Lb. Ground Meat
Salt and Pepper
1/2 C. Water
1 Tbsp. Taco Seasoning
2 Cloves garlic- minced
3 Tbsp. Taco Seasoning
3/4 C. Water
DIRECTIONS:
- In a skillet over medium heat add a bit of oil. You can use any kind of oil you have on hand. I like to use beef tallow or avocado oil
- Add the onion, ground meat, salt, pepper, 1 tbsp taco seasoning, and 1/2 cup of water. Break the beef up with a wooden spoon and cook until the water has mostly evaporated and the meat is fully cooked through. About 8 to 10 minutes.
- Add the garlic and cook for 1 minute or until fragrant.
- Add 3 tbsp taco seasoning and let cook for another minute.
- Add the 3/4 cup of water and mix well. Let this cook for 5 minutes to thicken the sauce. Remove from the heat and assemble.
INGREDIENTS:
Tortilla Chips
Cheddar Cheese- grated
Salsa
Enchilada Sauce
Tomatoes – diced
Olives- Sliced
Shredded Lettuce
Sour Cream
Other toppings of choice
DIRECTIONS:
- Preheat the oven to 350*
- Place the tortilla chips onto a large sheet tray evenly.
- Sprinkle over a light layer of cheese.
- Sprinkle over the ground meat mixture evenly.
- Add some olives, tomatoes, enchilada sauce, and more cheese over the top.
- Place in the oven for 5 to 10 minutes just to melt the cheese.
- Remove from the oven. Use a spatula to serve the taco nachos. When ready add the remaining tomatoes, olives, salsa, lettuce, and sour cream. You can add any other toppings you like, drizzle over extra enchilada sauce, and enjoy!
- Add your favorite sides to make a more full meal but we typically just serve as is as it is pretty filling. You do you and serve it as you like.
- You can skip the oven and just pile your toppings onto the tortilla chips if you do not want the cheese to be melted.
- You can add 1/2 cheddar and 1/2 mozzarella to the chips before melting the cheese for some yummy cheese pull. Add a bit of queso fresco for a freshness to the top before serving.
- Add some sliced jalapenos to the top for a bit of a kick. You can also use tamed jalapenos for a more mild spice.
- Add some nacho cheese sauce to the top before serving as well for a more nacho cheese flair.
- Add some warmed refried beans to bulk up the taco nachos even more. The sky is the limit for toppings.
- ENJOY!
