I’m coming at ya with another BBQ recipe. We love BBQ and we make it a lot. It doesn’t matter if it is summer, fall, or winter. We are cooking some good BBQ. I am going to share with you one of our new favorites. I have tweaked this recipe to perfection and you will love it. Make your favorite sides and you have a meal that your entire family will absolutely love.
So let me share with you this simple but delicious BBQ chicken.
INGREDIENTS:
1 recipe of my sweet heat peach sauce (the recipe is on the blog)
6 to 8 chicken thighs ( or for favorite chicken pieces)
1 onion- sliced
Salt and pepper
( you can use any other seasonings you may like here as well)
DIRECTIONS:
- Prepare beforehand the sweet heat peach BBQ sauce. You can find this recipe on my blog.
- Preheat the oven to 400*. Spray a casserole dish with oil and place the sliced onion onto the bottom of the pan. Spread out evenly.
- season the chicken on both sides with salt, pepper, and any other seasonings you like. Place the chicken onto the onions evenly.
- Pour 3/4 of the cause onto the top of the chicken and spread out evenly on top of the chicken.
- Cover with foil and bake for 20 minutes.
- Remove the foil, place it back into the oven, and cook an additional 20 to 25 minutes or until the chicken is fully cooked and registers 165* on a meat thermometer.
- Turn the broiler on high and let the broiler get hot for about 5 minutes. In the meantime brush the remaining sauce over the chicken and place under the broiler for 4 to 5 minutes. Keep an eye on the chicken so that it does not burn. It will burn quickly because of the sugars in the sauce.
- Once the sauce is lightly golden or how you like the sauce, remove it and let stand for a few minutes before serving.
- When serving spoon some of the sauce and onions over the chicken and serve with your favorite sides.
- You do not have to use my original recipe for BBQ sauce. The recipe explains this so please refer to the BBQ sauce recipe.
- You can use any style of seasonings you like for this. I find that the sauce has a lot of seasoning in it, so I typically go light-handed on extra seasoning. You do you when it comes to this part of the recipe.
- You can definitely grill this chicken on the grill a bit before adding the sauce. Use this sauce as you would any other style of BBQ sauce.
- Enjoy!
