Easy Beef Stroganoff

I love a good throw-together meal that is not only tasty but filling as well. This Easy Beef Stroganoff is just the thing for a super busy weeknight meal. With a few ingredients and a side and you have yourself a tasty dinner on the table in no time at all. Dinners like this come in handy during our planting and harvesting season around here. I love to cook so I am always making something. lol.

Let me share with you how easy this tasty dinner is to make.


8 oz. Egg Noodles
1 lb. Ground Beef
10 1/2 oz. Cream Of Mushroom Soup ( I use cream of mushroom with roasted garlic)
2 tsp. Garlic Powder
1 tsp. Onion Powder
1 tbsp. Olive Oil
1 Onion – diced
1/2 cup. plain full-fat Greek yogurt or sour cream (both work great)
Salt and Pepper – to taste


  1. Bring a large pot of water to a boil and salt it.
  2. In a skillet over medium-low heat add the oil, beef, onion, salt, and pepper. Break apart with your spoon and cook until the beef is cooked through and the onions are tender. This should take about 6 to 8 minutes. If you have excess grease in the pan, drain it off and discard the grease.
  3. While this is cooking go ahead and add your noodles to the boiling water and let them begin to cook.
  4. To the beef mixture add salt, pepper, garlic powder, onion powder, cream of mushroom soup, and sour cream. Stir to combine well. Add a bit of pasta water to thin out the sauce if it gets too thick.
  5. Once the pasta is done add the pasta to the beef mixture and toss to coat well. Add more pasta water if you need to thin out the sauce more. Adjust the seasoning to taste and you are ready to serve.

  • I often switch out the sour cream for plain full-fat Greek yogurt and it works just as well as the sour cream. The Yogurt gives it a slight tang but it is not overpowering. It pretty much does the same as sour cream.
  • You can substitute the cream of mushroom soup for any other cream of soup you have on hand. It will give it a different flavor but it is still good. Try cream of celery or cream of onion.
  • Try adding about 1/2 cup of peas to the mix right at the end to just heat them through. It is so good.
  • Serve as desired.
