Crockpot meals are definitely a go to when you don’t have a ton of time to get in the kitchen and make a ton of things for dinner. I know that I get into those days where I just can’t be bothered. We all do. That is why I love everything crockpot. They are so easy and they are always so delicious.
Since this is “Crocktober” and it is beginning to cool down here and become that “Fall” weather, I love utilizing my crockpot for cozy meals and I don’t have to stay all day in the kitchen. It’s a win-win. You get a delicious home cooked meal while you are doing other things.
So let me share another delicious crockpot meal with you..

INGREDIENTS:
1 lb. Ground Beef
1 tbsp Minced Garlic
1 pkt Taco Seasoning ( about 2 1/2 tbsp)
10 oz Cream of Chicken Soup ( or other “cream of” soup of choice)
2 Large Potatoes – Sliced about 1/8 to 1/4 inch thick
1 cup Beef Broth
1 tsp Oregano
1 tsp Ground Chipotle Peppers In Adobo
2 cups Grated Cheddar Cheese
Salt And Pepper – to taste
DIRECTIONS:
- Cook the ground beef and drain off any extra grease.
- Spray or line the crockpot with oil or a liner.
- Add the potatoes and spread out evenly.
- Layer on the ground beef evenly over the potatoes.
- Sprinkle over the taco seasoning evenly.
- In a bowl combine the cream of chicken soup, oregano, salt, pepper, and ground chipotle peppers. Mix well. Pour over the ground beef evenly.
- Add the grated cheese evenly over the top and pour over the broth.
- Attach the lid and cook on high for 3-4 hours or on low for 6-8 hours. The potatoes should be tender.
- Serve.
- This is a simple but delicious and filling meal. You can add any other add-ins or add-ons that you desire.
- I always serve this with some type of side dish. Most of the time it is just one side dish of some sort of veggie like corn, steamed broccoli, grilled squash or zucchini, or a side salad. Whatever you add to it, it will be delicious.
MY TACO SEASONING RECIPE:
1 tbsp. Chili Powder ( I use chipotle chili powder but regular is just fine)
1 1/2 tsp. Ground Cumin
1/2 tsp. Crushed Red Pepper Flakes
1/2 tsp. Salt
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
1/3 tsp. Oregano
1/3 tsp. Pepper
- This makes one serving. Combine everything in a small bowl and use as desired.
- You can double or triple this recipe and make a huge batch but, I always have each ingredient on hand so I make it as I need it.
- If you make a big batch just be sure to keep it in an airtight container.
- You can certainly play around with the measurements and add as much or as little as you think, according to your families taste preference.
