Chipotle Steak Bites

There is nothing I can say about this recipe….. It is steak and steak is good. lol.

This recipe is spicy, bright, and full of flavor. It can be easily prepare on the stove top or on a grill/flat top. It is so easy to put together and it is so good. Now, like any other recipe containing spice you can always cut down on the spice to your liking. We love spicy food as many of you know so this is perfect for us.

Chipotle Steak Bites

Let’s get started.

INGREDIENTS:

2 lbs choice of steak (boneless)
salt and pepper
ground chipotle pepper
2 tbsp neutral oil
1/4 cup butter – room temp
4 cloves garlic – minced
zest of 1 lemon
juice of 1/2 lemon
1/4 cup parsley – chopped
1 tbsp water

DIRECTIONS:

  1. In a bowl combine the steak, salt, pepper, ground chipotle, and lemon zest. Toss to coat very well so that all of the steak is completely covered in the marinade. Cover with plastic and let stand 30 minutes or up to 4 hours.
  2. When ready, Bring a large skillet ( or grill/ flat top) to med high heat. Add the oil and let the oil start to ripple. Add the steak and sear on both sides ( if using a skillet you may need to cook in two or three batches) for about 2 to 3 minutes on each side.
  3. Remove to a plate and cook remaining batches and remove all meat to a plate.
  4. Turn heat to medium low and add the butter and garlic and cook for about 30 seconds or until the garlic is fragrant. Scrape up any brown bits on the pan.
  5. Add the steak bites back in and along with the water, lemon juice and parsley. Toss to coat well and remove to a serving plate. You can squeeze a bit more lemon if you want to.. I usually do.
  • I like to serve with either rice or mashed potatoes and a side salad.
  • If you can not handle heat please please start with a little bit. Maybe a teaspoon and work your way up to more. If you add to much it may be to spicy for you.
  • If you want to add more fresh herbs you can add in some thyme, basil or rosemary as well. I grow an abundance of herbs every spring and by the end of summer I am up to my neck in herbs and I put it in everything. lol I guess I need to make a green house so I can have fresh herbs all year along with veggies.
