If you like hot wings then you are going to love these. They are slightly spicy with the bold flavor of chipotle. They are so good. We love making and eating spicy food and this is no exception. You can certainly tone down on the spice if you are not a spicy person or you can add more heat if that is your thing..lol.
Chipotle Buffalo Chicken Bites
INGREDIENTS:
1 lb chicken tenders – diced in 2-inch pieces 3 chipotle peppers – minced with adobo sauce 1/4 c. hot sauce – your favorite brand ( I use franks) 1/2 stick butter – melted and cooled 1 egg 1 c. flour salt and pepper – to taste 1/2 tsp garlic powder 1/2 tsp onion powder oil – for frying
DIRECTIONS:
In a bowl combine the egg, salt, and pepper. Mix well and let sit for 20 minutes.
In a separate bowl combine the melted butter, hot sauce, and chipotle peppers. Mix well and sit aside.
In a skillet over medium/low heat add the oil. Add enough to shallow fry. About 1/2 in up the pan. I use a small pan to limit the oil I put in the pan so I am drowning in oil. It takes a bit longer because you are cooking in batches but it is worth it.
Add the flour to a bowl. Dip the chicken into the flour and directly into the oil. Carefully. You don’t want the oil to hot because the chicken will burn immediately yet you don’t want it to low as it will absorb the oil instead of frying. A temp around 350 will work just fine. Cook the chicken until you see the chicken turn a bit white on one side. Then flip and cook about 2 to 3 minutes on the other side. It will not take long at all. Remove to a paper towel-lined plate to drain.
When you have all of the chicken cooked through, add them to the hot sauce mixture and toss gently to coat to avoid breaking the pieces. The breading will absorb the liquid and make sure they are coated well. Now you are ready to serve.

I spend hours, if not days, creating and dabbling with recipes to make sure they are the best for you and your family. All of my recipes are family tested and family-approved before they are ever posted to my blog or youtube channel.
