Pumpkin Pie Oats With Blueberry Chia Jam

With the weather getting the Classic Fall Chill in the air, It seems fitting to make a yummy and delicious breakfast. The ever so delicious pumpkin flavor along with a sweet and tangy blueberry jam. Oh yea, loving the fall at the moment. It gives me the opportunity to create all things pumpkin inspired.

This Recipe is so simple and easy to make and packed with healthy ingredients and full of flavor. I topped the Oats with Pumpkin Seeds, Cacao Nibs and Coconut Flakes. It added extra flavor and crunch and more nutrients to the Oats, And the color is gorgeous. 20171016_110043.jpg

The Blueberry Chia Jam is so easy. Fresh ingredients which make this jam super healthy for you and the flavor is on point. The blueberries are sweet and juicy. The chia seeds adds a slight crunch and thickens the jam so beautifully. The flavor of the jam is slightly sweet and slightly tangy. So delightful.

With this recipe you can use either frozen and de-thawed blueberries or fresh. Both work well. So let’s get on to the Ingredients and Directions for both.

For the Pumpkin Pie Oats you will need:

1/2 cup Quick Oats

1/2 cup Coconut Milk or milk of choice

3/4 cup Water

2 tbsp Pumpkin Puree ( do not use pumpkin pie mix)

1/2 tsp Pumpkin Pie Spice

1/2 tsp Coconut Oil

1/4 tsp Cinnamon

2 tbsp Maple Syrup or 2 Tbsp Coconut Sugar (more or less to taste

Pinch of Pink Himalayan Salt

DIRECTIONS:

  1. In a bowl combine all the ingredients and mix well. Microwave for 1 minute. Remove and stir. Cook another 1 minute and remove and stir to combine. If the mixture is right for you go ahead and top with any ingredients you like but I recommend pumpkin seeds, coconut flakes and cacao nibs. They compliment the pumpkin flavor really well.

 

For the Blueberry Chia jam you will need:

1/2 cup blueberries (fresh or frozen de-thawed)

2 1/2 tbsp Chia Seeds

1 tbsp fresh Lemon Juice

1 Tbsp Maple Syrup

1/2 tsp Vanilla Extract

DIRECTIONS:

  1. In a small bowl add the blueberries and using a fork or potato masher, Mash the blueberries until smooth but still slightly lumpy from the blueberry skins.
  2.  Add in the Lemon juice, vanilla, maple syrup and chia seeds. Stir until combined well. Let set about 10-15 minutes or until thickened.

Spread over your toast of choice. You can keep this in the fridge for up to 1 week. With this small amount you will not have it that long. It is easy to make so you don’t need to make a large amount. If you double the recipe, It will keep for 1 week in an airtight container in the fridge.

Two wonderful recipes in one little package. I hope you give this a try, and I hope you like this lovely little recipe. I loved creating this recipe for you guys and although the Oats are not really a new recipe I think spending less time making these Oats are what makes these such a wonderful quick breakfast. You can make this ahead of time and put them in an airtight container and take along with you to work or school. Both recipes are travel friendly.
