
When I tell you that we love fry bread…. We love fry bread. We use this for all sorts of things. Tacos, chips for dips, sandwiches, toast with cinnamon and sugar, dipping into soups and chili, and even breakfast tacos. They are so versatile and so good. They are easy to make, and they store really well.
This recipe that I am sharing with you today is a breakfast dish that my mother made a lot for breakfast on the weekends. It comes together quickly, and it fills you up so you can go about your day. On Sundays, my mom would make fry bread (unless we ran out), and we would have it for the week. On Saturdays and Sundays, if we had leftover fry bread, she would heat it up and make this delicious breakfast for us. It is so simple, y’all.
Let’s get started.
INGREDIENTS:
Fry bread ( see fry bread recipe)
Eggs – 2 per person
1/3 C. beans- rinsed ( we always used leftover beans, but pintos are great for this)
1 Tsp. Butter
Green onion – chopped
Salt and Pepper
Cheddar Cheese – grated (optional)
Hot sauce – (optional)
DIRECTIONS:
- In a bowl, whisk together the eggs, salt, and pepper until well combined. Set aside.
- Chop your green onions, grate your cheese, and rinse your beans.
- In a skillet over medium-low heat, add the fry bread and heat it up. About 1 to 2 minutes per side. Place on a plate.
- Add the butter to the skillet and let it melt. Add your rinsed beans and stir to heat them through. This should take about 2 to 3 minutes.
- Once the beans are heated through, add your eggs and scramble them. When your eggs are almost set, add some of your green onion and your cheddar cheese. Turn the heat off and continue to stir the eggs until everything is combined and cooked through, however you like it.
- Remove from the heat and top the eggs onto your fry bread.
- At this point, you can add some hot sauce if you like. Serve and enjoy.
- You can add crumbled bacon or sausage to the eggs if you like. Cook the bacon or sausage and place it on a paper towel-lined plate to cool. Crumble it up and add to the eggs when you are scrambling them. I do this occasionally, and it not only adds more protein, but it is really good.
- You can top this with more cheese and green onion, as well as more hot sauce.
- This recipe is for 1, but feel free to scale up for your family size.
- If you are feeling brave and want to add more to it, make some gravy and top these tacos with some white pepper gravy. yumm.
