Tequila Chili Chicken Tacos

This is my take on tequila lime chicken tacos but with a spin. They are so easy, so delicious, and they are a hit in our house. I love to char my tortillas but this is an option. I find it adds a little bit more flare and flavor to any taco.

These tacos are slightly spicy, slightly tangy, and a wonderful crunch from the cabbage. Everything just pairs so well together. I like to pair these tacos with my instant pot spanish rice, which is also on my blog. When I make these we never have leftovers. They are that good.

INGREDIENTS:
Marinade:

2 Chicken breast – thinly sliced
1/3 C. tequila
Juice of 2 Lemons
1 Tbsp. Chili Powder
Salt And Pepper – to taste
1/2 Tsp. Red Pepper Flakes
1/4 Tsp. Cayenne Pepper
2 Tbsp. Neutral Oil
1/4 Tsp. Baking Soda

FOR THE TACOS:
1/4 Head Of Cabbage – thinly sliced ( seasoned with lemon juice, salt, and pepper)
1 Tomato – diced
Queso Fresco OR Cotija Cheese – crumbled
Flour Tortillas – lightly charred
Sour Cream

DIRECTIONS:

  1. For The Marinade: To a large bowl combine all of the ingredients for the chicken marinade. Stir to combine. and cover with plastic wrap. Set aside for 30 minutes.
  2. In the meantime char your tortillas and place them on a plate and cover with a tea towel to keep warm. (more on this below)
  3. Go ahead and slice up the cabbage and place in a bowl. Season with the juice of 1/2 lemon, salt, and pepper. Dice up the tomatoes and assemble other toppings that you would like on your tacos.
  4. Heat up a large skillet over medium-low heat and add a little oil to the pan if needed. Add 1/2 of the chicken to the skillet and cook for 3 to 5 minutes or until golden and cooked through. Remove to a bowl and cook the second batch of chicken.
  5. To Assemble: To the tortilla add your chicken, cabbage, and your favorite toppings. I like to add tomatoes and sour cream. Simple but delicious.
  • For the tortillas: To char the tortilla (stove top) If you have a gas stove, turn the heat on to about medium-high heat. Using a pair of metal tongs place the tortilla directly over the open flame. Let the tortilla cook for 10 seconds or so before flipping to char the other side.
    For electric ovens: Place the tortillas on a sheet pan and broil on high heat under your stove broiler. This should take about 3 to 4 minutes flipping halfway through.
  • You can turn these tacos into burritos by warming a burrito-style tortilla shell adding all of your toppings and chicken and rolling it up like a burrito. lol. It will be just as tasty.
