Fiesta Potatoes

I created these “fiesta potatoes” a few years back when I was on the taco bell fiesta potato kick. Man, that was quite a few years ago now that I think about it. lol. About 15 years ago to be exact. We won’t get into that.

I got tired of going to taco bell and ordering them so I just decided that I should make them at home and they would be made with better ingredients and taste just as delicious. I made quite a few trial runs before settling on this recipe. It is not a 100% match but they sure are tasty.

INGREDIENTS:

2 Tbsp. Cornstarch
2 Tbsp. Flour
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
1 Tbsp. Chili Powder
2 Tsp. Paprika
1/4 Tsp. Cayenne Pepper (more or less to heat preference)
1/2 Tsp. Cumin
Salt and pepper – to taste
4 Large potatoes – Diced

CHEESE SAUCE:

2 Tbsp. Flour
2 Tbsp. Neutral Oil
1 C. Milk (more if needed)
Salt – to taste
1 C. Cheddar Cheese – Grated

DIRECTIONS:

  1. To a large saucepan add the potatoes and fill the pan up with water to just cover the potatoes. Place over medium heat and bring to a boil. Boil the potatoes for about 4 minutes. Drain and set aside. Preheat the oven to 425* and line a sheet tray with parchment paper or a silicone mat.
  2. To a small bowl add the cornstarch, flour, garlic powder, onion powder, chili powder, paprika, cumin, cayenne pepper, salt, and pepper. Mix well and set aside.
  3. Add the cooked potatoes to a large bowl and drizzle with a little bit of oil. Add the seasoning mixture and toss to coat evenly over the potatoes.
  4. Spread the potatoes over the lined baking sheet and bake for 15 to 20 minutes. Remove from the oven and toss the potatoes and bake again for another 15 to 20 minutes or until golden brown.
  5. In the meantime, make the cheese sauce.
  6. In a saucepan over medium-low heat, add the oil and flour. Whisk to combine and cook for 1 to 2 minutes to cook out the raw flour taste. Add a bit of salt and whisk together.
  7. Slowly add the milk while whisking to prevent the sauce from clumping up. Whisk and cook until the sauce has thickened. About 3 to 5 minutes.
  8. Add the cheddar cheese and whisk until smooth. This should take about 2 to 3 minutes. Remove from the heat and pour into a serving dish.
  9. TO SERVE: Place some of the potatoes down on a plate or small bowl. Drizzle over some of the cheese sauce. Top with sliced green onions, sour cream, and hot sauce.

  • These are fluffy little potato bites with a crisp exterior. The seasoned potatoes pair well with the cheese sauce, sour cream, and hot sauce.
  • To add even more flavor to these potatoes cook them in chicken broth instead of plain water.
  • If you do not want to make your own cheese sauce you can certainly use store-bought.

  1. Believe it or not, I have never been to a Taco Bell, but the potatoes alone sound good. I may make half the cheese sauce because it’s just me for dinner tonight, and my husband is not a fan of sauces anyway, including gravy, which I love! Getting pickier as he ages. Thank you for all the work you do to bring us recipes!

    1. I have not been to Taco Bell in quite some time. My daughter will want tacos from time to time, but I typically opt out. If your husband doesn’t like sauces maybe you can top it with the cheese dip from… I think tostitos. The salsa con queso. I’ve used it on occasion when I didn’t feel like making cheese sauce. Lol. It is just an option. I hope you both enjoy it and thank you.
