Paul Bunyan Subs

This is a recipe that my mom would make at least once every two weeks. It was easy to make and it was filling. I had all sorts of after-school activities growing up. I had horseback riding, chores, cheerleading, and softball. Not all on the same day but some days it sure did feel like it. I was just a very active child and teen. I loved and still love being active.

This recipe is quick to make and so good. It is kind of reminiscent of sloppy joes but on a whole different level. My kids loved it and I am sure your children will too. So, let me share with you how to make it.

INGREDIENTS:

Sub buns ( top cut)
1 Lb. Ground beef
1/2 Onion – diced
1/2 Bell Pepper – Diced
1 Tbsp. Worcestershire Sauce
Salt and pepper – to taste
1 Can of Cream Of Mushroom Soup
1 to 2 C. Grated Cheese – Mozzarella or Cheddar
1/4 C. Milk

DIRECTIONS:

  1. Preheat the oven to 350*. Line a sheet tray with parchment paper. Set aside.
  2. If your sub buns are not cut on the top you will need to cut them. Just take a pairing knife and cut around the top to make a “boat shape”. Leave some of the bread around the sides so it will help hold its shape. Set aside.
  3. In a large skillet over medium-low heat add the ground beef, onion, bell pepper, salt, and pepper. Break apart with a spoon and cook until the ground beef is cooked through and the onion and bell peppers are tender.
  4. Add the Worcestershire sauce, milk, and the cream of mushroom soup. Stir to combine well. Turn the heat to low and cook, stirring often, for 5 minutes. Remove from heat.
  5. Spoon the mixture into the sub-buns evenly. Gently press the mixture down to slightly pack it into the buns to help keep the mixture in the buns.
  6. Sprinkle over the cheese evenly on the top. Place on the prepared sheet tray. Bake for 10-12 minutes or until the cheese is melted.
  7. Remove from the oven and let cool slightly before serving.

  • You can serve these however you want. I like to serve these with chips but you can do french fries as well.
  • These will go great as a “Sloppy Joe” sort of sandwich. You can place the mixture onto a burger bun and serve it that way also.
  • I used homemade sub suns in the featured photo but any will do.
