Mint Iced Coffee

Today I am going to share with you one of my favorite coffee drinks. It is refreshing and light. It packs a punch with espresso and is perfect for hot summer mornings. The mint is refreshing with a bold flavor of the espresso gets you going in the morning. If you love mint and coffee you are sure to love this one! let’s get going.

Here is what you will need.

Ice
3-4 mint leaves
strong cold brew (espresso)
2 tbsp heavy cream
1-2 tsp simple syrup

SIMPLE SYRUP:

1 c. stevia or sugar
1 c. water

  1. In a sauce pan combine the water and sugar and bring to a boil. Cook over heat ( medium) until thickened. About 5 minutes. Remove and let cool. Store in an airtight container in the fridge up to 2 weeks.

ICED COFFEE

  1. In a coffee maker or espresso maker brew your favorite coffee. Make sure to brew the coffee a bit strong as you want this coffee strong. Remove and let cool but leave the coffee slightly warm. Make sure it is warm enough to slightly melt the ice. This will allow the ice to slowly melt in your drink.
  2. Add your mint to your cup and using the back of a wooden spoon, muddle the mint slightly to release the mint flavor and oils into your cup. Add a few pieces of ice into your cup and pour over the coffee. At this point if you are using espresso you can add a bit of water if you feel the espresso is to strong. I often do this just to help fill up the glass.
  3. Add in your simple syrup and cream. ( before you stir your drink- take a picture of that fabulous cream swirl) now that you have admired that swirl you can mix your drink. You can top this with whipped cream if you like. I often do because….. whipped cream. You can add as much simple syrup as you like and to your desired sweetness. This also goes for cream. Add as much or as little cream as your heart desires.

Now you can go curl up with a good book on your porch and take that first sip of this refreshing coffee drink. I love coffee and I love coming up with different variations of these wonderful little drinks.
